Cerbiano is the premium label of Tenuta del Gelso, a Sangiovese Superiore Riserva that brings the vine to the most excellent expression of the Bertinoro area.
It takes its name from the toponym of Cerbiano, one of the many traditional localities at the foot of Monte Maggio, easily identifiable from the little church of the Madonna di Cerbiano which dominates the slopes of the estate.
For this wine, we use a selection of the best bunches from specific crus suited to ageing, such as the historic Costone vineyard.
Aging is carried out in first passage French oak tonneaux for 18 months and for a further 7 months in the bottle. Fermentation takes place in state-of-the-art steel fermenters at a controlled temperature of 22-24°C. The must remains in contact with the skins for 16-18 days.
Tasting notes
Intense ruby red, with violet reflections.
The nose has intense aromas of ripe red and black fruits, with a marked and balanced balsamic and spicy note.
On the palate it denotes a great structure, supported by a sweet, soft and ripe tannic texture. The finish is long and very persistent.
Food pairings
Ideal:
steaks and grilled meats, stews and meatballs, dishes with forest flavours, polenta, braised and stewed meats, rustic cured meats.
Interesting:
pork, duck, winter vegetable flans, cereal and legume soups, fossa cheese.
To try:
creamed salt cod, curry chicken.
